Oven-baked beetroot fries
Beetroot fries are a colourful side for burgers, bowls and vegetarian dishes. Made from cooked beetroot sticks, they bake much faster than raw beetroot, because the oven only needs to crisp them up.

Ingredients
- 500 g cooked beetroot sticks
- 1–2 tbsp potato or corn starch
- 2 tbsp rapeseed or olive oil
- ½ tsp sweet paprika
- ½ tsp dried thyme
- salt to taste
Method
- Heat the oven to 200°C fan. Line a baking tray with baking paper.
- Pat the beetroot sticks thoroughly dry with kitchen paper – the drier they are, the crispier they get.
- Toss the sticks in the starch, then mix with the oil, paprika and thyme.
- Spread the fries on the tray in a single layer so they do not touch.
- Bake for 15–20 minutes, turning halfway. Salt them as soon as they come out of the oven.
Air fryer
In an air fryer, cook the sticks at 200°C for 10–12 minutes, shaking the basket every few minutes. Do not overfill the basket – the fries need space to crisp rather than steam.
What to serve them with
- yoghurt dip with garlic and dill
- horseradish mayonnaise – a classic pairing with beetroot
- alongside a beef burger
- in a grain bowl with feta and roasted chickpeas
